A delightful Private Members Club in a renowned luxurious Central London location are looking for a Sous Chef to join their busy brigade.
Reporting into the Head Chef and Executive Head Chef your role will be to supervise the production and service of food whilst assisting in the management of a brigade of 50+ Chefs. You will assist the Head Chef and Senior Sous in developing new recipes and menu’s that can be put into execution. You will play an active role in the business side of the kitchen; cost control, stock control & rotation and ordering. Another part will be to mentor and train the Junior Sous’, Chef de Partie’s and Commis’ and ensure they are learning and developing in the appropriate manner. You will conduct appraisals with them to see where they are at right now and where they can improve.
We need the next Sous Chef to come from a high volume London venue, where they have been working in a large brigade of chefs. You must have impeccable communication skills and have the passion, belief and inspirational skills to motivate a team to succeed. As Sous Chef you will be in a senior role so you will have had some experience with kitchen administration.
